Deuxième ville de France en nombre d'habitants (quoiqu'une vieille querelle de chiffres l'oppose depuis des siècles à Marseille sur ce point), Lyon est une ville qui regorge de richesses ignorées !

Longtemps boudée par des têtes de veaux qui la résumaient trop facilement à l'encombré tunnel de Fourvière emprunté pour aller skier dans les Alpes voisines, la cité rodhannienne jouit paisiblement de sa position stratégique entre le nord et le sud.

Lyon est en effet une des rares villes de France à réconcilier ces deux facettes de notre culture, entre les façades colorées des quais de Soane qui font penser à Pise ou Rome, et la rive Ouest du Rhône, plus haussmanienne.

Toute à la fois Latine et nordique, l'ancienne capitale des Gaules est un concentré de France, jusque dans son titre de capitale de la gastronomie !

La découverte de Lyon invite à une balade entre les siècles :

L'époque gallo-romaine, avec les vestiges de l'amphithéâtre sur les pentes de Fourvière (des spectacles y sont fréquents en été), et le musée gallo-romain. N'oubliez pas que Lyon - Lugdunum - était au début de notre ère la deuxième plus grande ville de l'empire Romain ! A l'époque médiévale, les quartiers St Jean, St Paul et St George qui forment l'actuel vieux Lyon se développent. Alors que le clergé impose sa domination sur la ville, les premières traboules font leur apparition.

Mais c'est surtout à la Renaissance, au début du XVè siècle, que Lyon retrouvera un rôle central en Europe.

Lyon est en effet un des plus importants centre commercial de la Renaissance. Elle s'affirme comme un carrefour incontournable grâce à ses axes fluviaux, ses foires où se retrouvent tous les marchands du continent, et le développement de l'industrie textile (soie).

La première bourse française y fait son apparition. Banquiers et riches familles italiennes s'installent le long de la Saône, marquant de leur empreinte l'architecture des demeures du vieux Lyon. A partir du XVIIè siècle, le centre névralgique de la ville se déporte vers la presqu'île. Y sont édifiés ou achevés de nombreux bâtiments aujourd'hui célèbres : l'Hôtel Dieu, l'hôtel de ville de la place des Terreaux, le théâtre des célestins, la fontaine des Jacobins ou encore la place Bellecour A cette époque, Lyon est la ville la plus prospère de France grâce à l'industrie de la Soie. Les ateliers se concentrent particulièrement sur la Croix Rousse et descendent jusqu'à la Saône.

Lyon est marquée à l'époque de la révolution industrielle par les révoltes de Canuts du début du XIXè siècle. Ces ouvriers de la soie subirent une répression tristement célèbre.

Pendant la seconde guerre mondiale, Lyon est la Capitale de la Résistance française. La plupart des journaux clandestins y sont produits.

C'est à Caluire dans la proche banlieue lyonnaise que Jean Moulin est arrêté. Installé dans les anciens locaux de la gestapo, le musée de la résistance vous invite à redécouvrir le rôle de Lyon dans la Résistance française.

En 1850, les autorités religieuses lancent un concours pour la réalisation d’une statue, envisagée comme un signal religieux au sommet de la colline de Fourvière.

Un an plus tard, ce concours est remporté par le sculpteur lyonnais Fabisch, et la date du 8 septembre 1852 est choisie pour son inauguration. Mais au mois d’août, la Saône sort de son lit et envahit le chantier où la statue doit être réalisée.

L’inauguration est donc reportée au 8 décembre, fête de l’immaculée conception. Le jour même, les journaux annoncent le programme de la soirée et toute la ville se prépare pour l’événement. Quelques uns prévoient même d’illuminer les façades de leurs habitations à l’aide de bougies.

Mais le mauvais temps va à nouveau contrarier les réjouissances, contraignant les autorités religieuses à remettre l’inauguration au 12 décembre. Malgré ce contrordre, l’enthousiasme des Lyonnais ne fut pas éteint.

Dès 18h, les premières fenêtres s’allument, et à 20h, la ville entière est illuminée. Une grande partie de la population descend dans la rue, joyeuse et attendrie, s’étonnant de ce geste spontané et communicatif. Les autorités religieuses suivent le mouvement et la chapelle de Fourvière apparaît alors dans la nuit. Ce soir là, une véritable fête est née !

Chaque année désormais, le 8 décembre, les Lyonnais déposent des lumignons à leurs fenêtres et se retrouvent pour déambuler dans les rues de la ville.

« A défaut de nous remettre d’aplomb à une heure avancée et arrosée de la nuit, rien de tel que de rentrer dans une brasserie pour se réchauffer et reprendre un peu d’énergie pour affronter le froid piquant de l’hiver. »

Ingrédients

Pour 4 personnes :

1 kg d’oignons

1 l de bouillon de bœuf

200 g de gruyère râpé

4 tranches de pain de campagne

10 cl de porto rouge

50 g de beurre

1 branche de thym

2 feuilles de laurier

poivre, sel

Préparation

Nettoyer et éplucher les oignons

Emincer les oignons grossièrement

Faire fondre le beurre dans une casserole à feu moyen

Ajouter les oignons et les laisser bien colorer. Ils doivent presque caraméliser. Si ils attachent de trop, versez un peu de bouillon pour les décrocher et répétez l’opération si nécessaire

Ajouter le bouillon, la branche de thym et le laurier

Poivrer généreusement et saler à votre convenance

Laisser cuire à couvert pendant 1 heure à feu doux et à petit frémissement

Retirer du feu et retirer le thym et le laurier

Ajouter le porto rouge et bien mélanger

Verser le potage dans 4 bols bien larges (bols à gratinée)

Déposer dans chaque bol une tranche de pain et la recouvrir de gruyère râpé

Donner un tour de moulin à poivre sur chaque bol

Enfourner pendant 5 à 10 minutes sous le grill d’un four préchauffé à 210°.

Laisser le gruyère bien gratiner. Servir chaud!
